  1. Get your strip loin! Plan on 1/2 lb per person, and choose lean and boneless cuts for easier carving.
  2. Split the strip loin lengthwise into 2 small roasts.
  3. Cut one of the roasts into steaks, and keep the remaining roast as-is.
